This was a staple dish from my childhood. Warm, hearty, savory and made with love in my mother’s kitchen. The recipe is from “The Modern Family Cookbook,” by Meta Givens. Apparently it was a textbook at the uni my mom attended for her home-ec degree, published in 1943. And trust me, it has withstood the test of time. ![]()
Ingredients
5 C thinly sliced potatoes
1 medium onion, sliced
2 t salt
3 T butter
1 2/3 C evaporated milk (1 can)
1 C water (or suit to taste)
1 T finely chopped parsley (add other herbs to taste, e.g. fresh thyme)
Directions
Put potatoes and onion into large saucepan and barely cover with cold water. Add salt, cover tightly and bring to boil; reduce heat and simmer for 10 minutes or until potatoes are perfectly tender. Mash potatoes in their liquid. Add butter and evaporated milk, and enough water to give the desired thickness. Reheat to scalding, remove from heat, and add chopped parsley. Serve immediately.
