Chocolate Tipsy Cake

A recipe from Practical Magic that I can’t wait to try! Ever since I saw the movie and read the books, this cake has sounded soooooooo tempting!

Cake Ingredients
1 c unsweetened cocoa powder + additional for dusting pan
1 c fresh coffee
1/2 c dark rum
1 c salted butter
1.5 c brown sugar
2 c flour
1 1/4 tsp baking soda
2 large eggs
1/2 c buttermilk
1 tsp vanilla
1 tsp cinnamon
pinch clove
1/2 bar dark chocolate (chopped)

Icing Ingredients

4 oz unsweetened chocolate
3 tbs butter
1 lb powdered sugar
4 tbs milk
3 tbs dark rum
Dash Salt

Cake Directions

  1. Preheat oven to 325 while you grease and dust with cocoa powder a large bunt pan.
  2. Add to a saucepan on medium-low heat: coffee, rum, butter, cocoa powder, chopped chocolate bar, and sugar until all is melted and combined, then cool.
  3. Once the coffee and chocolate mixture is cool add buttermilk, eggs and vanilla.
  4. Sift in flour mixed with soda, cinnamon, and clove a little at a time until well combined.
  5. Pour into bundt pan and bake 40 minutes or until toothpick comes out clean.

Icing Directions

  1. Add melted chocolate and butter mixture to mixing bowl along with your powdered sugar and salt
  2. Stir until well blended
  3. Add you milk and rum one tablespoon at a time, stirring between each tablespoon until mixture is smooth and creamy
  4. Note: For a thinner frosting, stir in a tablespoon at a time of either rum or milk until desired thickness is achieved.
  5. Use immediately or store in the refrigerator

Damn, that sounds good. If only I didn’t suck at baking. I might just settle on the rum
