Bacon & Mushroom Quiche

Savory, creamy breakfast pie – can be made ahead of time or served right from the oven. Yummy fare for fall or winter mornings.

Herb/Spice properties: Cayenne pepper for boldness, protection and motivation; nutmeg for fidelity, love health and luck

Ingredients

For the pie
1 pastry shell
1/2 lb bacon
3 tbsp butter
1/2 lb mushrooms, thinly sliced
1/2 tsp salt
1/8 tsp black pepper
2 tbsp chopped parsley
2 eggs
1 C half & half
1/8 tsp salt
1/8 tsp cayenne pepper
1/8 tsp nutmeg

Garnish
Several parsley sprigs

Directions

  1. Preheat the oven to 375°.
  2. Cut the bacon into small pieces and fry in a heavy skillet until crisp. Remove and drain on paper towels and set aside. Melt the butter in a heavy skillet and cook the mushrooms until their liquid content has evaporated. Season with salt, pepper, and parsley. Add the bacon, mix well and spread in the pastry shell. Lightly beat the eggs with a whisk add the half and half and seasonings and blend until smooth. Set the pastry shell on a sheet pan and carefully pour in the custard mixture.
  3. Bake on the center rack for 40 minutes, or until the top is puffed up and browned and a knife inserted in the center comes out clean. Remove from the oven to a wire rack for 5 to 10 minutes to let the custard set. Garnish and serve hot.
